Eggplants are ready, and so am I. This is one of Henry's favorite things to make. Enjoy!!
1 Medium Eggplant, cut into 3" x 1" pieces
1/2 cup flour
Flavoring mixture:
1 tsp chopped garlic
1 tsp chopped ginger
1 Tbs chopped onion
1 Tbs chopped fresh hot peppers
1/2 cup ground beef
2 Tbs cooking oil
1 Tbs chopped onion
Sauce Mixture:
1 Tbs dry sherry (or other wine)
2 Tbs hot bean sauce
1 Tbs Chinese black vinegar
1/3 cup stock
1 tsp soy sauce
1 tsp sugar
1 tsp cornstarch
Shake the eggplant in flour to coat. Fry for 2-4 minutes until golden brown. Stir fry the flavoring mixture in 2 Tbs oil, add the ground beef, and fry. Add the sauce mixture and stir well. When the sauce turns glossy, mix in the eggplant. Gently fold the eggplant into the sauce. I serve this over rice and top with fresh green onion or parsley.
